This all sounds so Shakespearean! Well, 'tis to a tea leaf. The term "Agony of the Leaf" refers to the unfurling of the tea leaf during infusion. This can be very dramatic to see and a wonderful stage of tea brewing. This is best done by putting loose tea leaves in a clear glass pot and letting them infuse without the use of an infuser. If you do not have a clear pot then just enjoy in your own special tea pot, and when you you have enjoyed your tea, simply dump out the tea leaves onto a plate. It is fun and interesting to see and touch the whole tea leaves.

Because the leaves are not constrained in any fashion, they are able to fully share their beautiful shape and full flavor.

Above we have used an Oolong tea to demonstrate the difference between steeped and un-steeped tea leaves; Oolong Teas are excellent to witness the unfurling process.

Yet another excellent reason to drink loose leaf tea, even if purely for the fun of watching the tea leaves unfurl. If you are immersing yourself in the exciting world of higher quality ethically sourced teas, or just starting out on this wonderful road to good tasting fresh tea; there is no doubt you will enjoy and appreciate just what a tea leaf goes through. Ah, yes, the Agony of the Leaf.

We've got a few cookie secrets to share with you!

 

These tips will make the best chewy/crispy cookies you have ever made.

 

I have been baking cookies for a long time now (not saying how long) just know it's been a while!

We at TeaZehri bake our in house cookies always following these basic rules.

1. Most good drop cookie recipes will have 1C. butter, 2C. sugar and 2 eggs & vanilla., plus the

rest of the ingredients.

2. This is most important!!! Cream soft butter 2 minutes, add sugar slowly, beat this mixture another 2

minutes, then add both eggs & vanilla. Beat an additional 2 minutes. This can be done with a hand

mixer or stand-up mixer. (A total) of 6 minutes) We call this the "Two Minute Rule".

3. Exact measuring in baking is very important.

4. Do not cheat on the ingredients. If you don't have enough of an item or plan on substituting: Don't!

It doesn't work.

5. Don't over bake. If the centers seem a little squishy still, that's fine as they will finish baking out of

of the oven on the hot cookie sheet.

6. Use parchment paper

7. Cool one to two minutes on hot cookie sheet then transfer to a cooling rack.

One of the most often questions we get asked in the spring and summer season:

How do we make our delicious iced teas?

We serve a variety of our blended teas over ice in store during these seasons.

 

A. Good quality tea makes a good iced tea. Flavorful without using a ton of sugar

B. Many tea blends make wonderful iced tea. "experiment"We use Flavored Black Teas, Flavored Green Teas, Flavored Rooibos Teas, Tisane Tea (fruit and herb), and even Herbal Tea (like hibiscus)

C. Remember your tea will get watered down when you and ice, so general rule of thumb use double what you would for hot tea. (1tsp. per cup 1T. per 2-3 cup teapot.

D. Most Important the right recipe.

 

TEAZEHRI ICED TEA RECIPE

 

makes 1-1/2 liters of tea

INGREDIENTS: 25 gr. or 1 - oz of tea

1-1/2T of sugar or honey. half that if using Stevia

boiling water

INSTRUCTIONS: Place sugar, honey or Stevia & 25gr of tea (in a LARGE infuser into a 6 cup tea pot

or heat resistant container. Add boiling water. allow to steep for recommended time.

Remove infuser with tea and let cool. Put into a container of your choosing and

refridgerate.

STEEP TIMES: Black Tea 5 minutes, Green Tea 3-5 minutes Tisane (fruit & herb) can be left overnight

in the teapot overnight, then removed

NOTE: Hibiscus is the "ONLY" tea that brews overnight on the counter of fridge without using boiling

water. Part of the "Agony of the Leave" or unfurling the tea leaf for maximum flavor, requires

the use of boiling water.
