Most wood burning pizza ovens will require a curing process prior to first use. Ovens absorb moisture during the construction phase because of the refractory mortar and firebricks. The curing process helps eliminate the moisture at slow rate to avoid structural cracks. The basic idea is to gradually increase the heat over a period of 5 - 7 days.
