Creamy Chicken Alfredo Sauce-Healthy & Homemade

When it's squash season I know just what to make, I love that spaghetti squash is a great alternative to any noodles or pasta and it has a similar taste and texture. This year in our garden we only planted one spaghetti squash plant and it produced a lot! We were so amazed! These plants are easy to maintain and grow and are delicious when ready to eat. This Creamy Alfredo Sauce to go with the spaghetti squash is comfort food at it's finest. It has fresh herbs and seasonings with a creamy coconut milk base.

RECIPE Creamy Alfredo Sauce-Healthy & Homemade

Ingredients

1 stick of butter

2-3 cloves minced garlic

1 can coconut milk or 2 cups heavy cream

1 c of cheese (either Parmesan or white cheddar)

4 oz cream cheese

Salt and pepper to taste

1-2 tsp Italian seasoning

Preparation

  1. Add butter and garlic cloves to a saucepan on medium heat until melted.

  2. Add heavy cream and cream cheese. Mix until thoroughly combined. I like to use a whisk to mix it all together.

  3. Mix until the sauce is bubbly but not boiling.

  4. Now add your cheese, it should start to thicken up, heat until bubbly. Then remove from the heat and add your salt and pepper and Italian seasoning.

  5. Now it’s ready to enjoy, serve over your favorite pasta!

Tips

*If the sauce doesn’t thicken after boiling for 5 minutes than make a little cornstarch/water mix.

*Just add 2 Tbsp cornstarch with 2 TBSP water, mix in a separate cup, then add to the sauce to thicken.

*At the end if the sauce is too thick add a little whole milk or 2% milk to thin it out.

*Boil and cook your pasta while making the sauce that way they are ready when you finish your sauce.

*If you have a big family then double the recipe!

*Use organic ingredients when possible

How to Cook Spaghetti Squash (In the Oven)

  1. Preheat your oven to 400 degrees

  2. Take the spaghetti squash and give it a good washing. Get all the dirt and grime off of it, then pat dry. Cut it in half, you'll want to use a sharp knife for this, they have a pretty hard rind.

  3. Scrape out the seeds and discard

  4. Drizzle avocado oil all over the inside and outside rind of the squash. Season with salt and pepper

  5. Place in your oven cut side down on a cookie sheet for 45 minutes. Take out and let cool, then flip over and use a fork to get out all the squash, as you use your fork to remove the squash it will turn into small spaghetti strands.

  6. You can place your sauce directly in the squash or scoop out the squash and put onto a plate, then pour your sauce on top! It's a delicious meal your whole family will love!

  7. I like to top it off with fresh tomato and some fresh parsley but season it how you like!!
