Southwestern Quinoa Salad

Working on an article for a local magazine, which means I now get to eat off of this delicious quinoa salad with all the fall colors for the next several days. No complaints here, since it provides the perfect amount of protein, veggies and healthy fat in each delicious bite.




INGREDIENTS


- 2 cups of cooked quinoa

- 1 cup each of sliced cherry tomatoes

- 1 cup bell pepper

- 1 cup black beans

- diced cucumber

- diced red onion

- diced avocado


For Dressing:

- juice of 2 lemons

- 2-3 Tbsp olive oil

- 1 tsp cumin

- 1 tsp garlic powder

- salt and pepper to taste



DIRECTIONS


Mix all ingredients together, top with dressing and enjoy!
