Ditch the boxed vanilla pudding mixes from the grocery store that are filled with lots of added sugar and preservatives and make this instead. You will notice a difference 100%. This pudding is creamy, flavorful, and delicious with fresh fruit and whipped cream!
Sugar-Free Vanilla Pudding
Serves 6-8 people
2 cups organic raw milk (or whole milk)
¾ c organic heavy cream
3 egg yolks
3 ½ TBSP cornstarch
2 tsp vanilla extract
1 vanilla bean (optional)
¼ tsp sea salt
In a saucepan on medium heat add your raw milk and heavy cream to saucepan. Let the mixture get hot, but don’t let it come to a boil. Whisk occasionally. When it is ready you will notice bubbles around the edges of the saucepan. When it’s ready remove it from the heat.
In a bowl with your stand-mixer add your egg yolks, monkfruit sweetener, cornstarch, salt, vanilla extract, & vanilla bean. Mix until it’s creamy and light in color (5-10 minutes)
To temper the egg mixture very slowly add 1 cup of the hot milk mixture, constantly whisk the mixture so it doesn’t scramble the egg yolks. Add the remaining milk mixture and mix.
Then take the mixture and pour it through a strainer to remove any lumps.
Now add the mixture back into your saucepan and cook on medium heat for about 6-8 minutes until it gets thick and creamy. Remove from heat once it’s thickened and let cool for about 10 minutes.
Place mixture in the refrigerator with plastic wrap to cover the top and let it set for 4-6 hours. I prefer it cold but if you like warm pudding then dig in!!
Add your favorite toppings like fresh fruit, whipped cream, or just eat it as it. The pudding is so creamy and smooth, I just love how good it tastes!!
