What's on the Menu? One Pan Garlic Herb Chicken and Asparagus

During transition phases, it is always a good idea to keep yourself engaged. Cooking, I have found, is one such way of keeping life interesting, and adding that luxurious touch to your life, every day. You are what you eat, and it is always a good idea to ensure that you are nourishing your body with foods that not only taste good, but are good for you. If you are in the preliminary phases of your independence journey, and have a small number of pots and cooking utensils, or to the other other extreme if you're a young professional and have a family and minimal time to prepare dinner, the one pot meal is the ideal meal for you to embrace. For this week's food journey, yours truly has decided to embrace a recipe that I found on the website Creme De La Crumb. The following are the ingredients and the procedure for preparation. ONE PAN GARLIC HERB CHICKEN AND ASPARAGUS

 

Ingredients

· 3-6 chicken thighs or boneless skinless chicken breasts (breasts pounded to even 1/2 inch thickness)

· salt and pepper, to taste

· 1 pound asparagus, ends trimmed

· 3 tablespoons butter, divided

· 1 tablespoon minced garlic

· 1/2 teaspoon dried basil (see note)

· 1/2 teaspoon dried oregano

· 1/2 teaspoon dried thyme

· 1/2 teaspoon onion powder

· salt and pepper, to taste

· fresh herbs for garnish (optional)

 

Instructions

1. Season chicken with salt and pepper on both sides. Melt 2 tablespoons butter in a large pan/skillet over medium-high heat. Stir in garlic and herbs and cook another minute or so until the garlic is fragrant.

2. Reduce heat to medium, add chicken to pan, and cook for 5-7 minutes, then flip and cook another 5-7 minutes. (Chicken should be nearly, but not completely cooked through by this point)

3. Scoot the chicken over the sides and add remaining 1 tablespoon butter to the empty portion of the pan. Once the butter is melted, add asparagus. Season asparagus with salt and pepper, to taste. Cook, rotating throughout, for 4-6 minutes until tender and chicken is completely cooked through.

4. Serve immediately garnished with freshly cracked black pepper and fresh herbs if desired.

 

The beauty about having the luxury to now work from home, is that I am able to spend some more time in the kitchen, and take the time to prepare meals that I will enjoy. At lunch time or dinner time, the above will definitely be a pleasure that I look forward to indulging in. With respect to my current budgeting journey, I am focusing on ensuring that I keep life economical yet fabulous. My mantra literally is "Let them call you cheap!" Why I say this, is that from the perspective of someone who is currently engaged in wealth creation, simplicity is always the key.

 

What you don't want, is to over exert your pocket, and end up in a situation where you don't have money to invest, or don't have money to travel just because you were trying to impress people on the spot. Live for yourself. You have to learn to think...long term. Sacrifice today, in order to ensure that you are thriving tomorrow.

 

With respect to the fact that I currently live out of town, I have managed to save money even though I've been commuting three times per week into Kingston for work. Where I am now, since work ended last week, I don't take a taxi into town to go to the supermarket. Yours truly walks the twenty minutes and I visualize the houses as I walk through the neighborhood.
